No-Cook Apricot and Chocolate Chip Picnic Bars

These bars are so easy to make, require no cooking and are full of great nutrition. Perfect for a picnic as they will provide you with the energy to socialise and play some afternoon ball games!

No-Cook Apricot and Chocolate Chip Picnic Bars

90 grams Dates
90 grams Dried Apricots
1/2 tsp Cinnamon
2 tbsp Chia Seeds
5 tbsp Rolled Oats (porridge oats)
5 tbsp Sunflower/Pumpkin Seeds
2 tbsp Sesame Seeds
100 grams Dark Chocolate, chips (vegan can be used)

No-Cook Apricot and Chocolate Chip Picnic Bars Directions

Add all of the ingredients (apart from the chocolate) in to a food processor and pulse until a coarse mix has developed. Mix in the chocolate chips with a spoon.

In a lined baking tray (roughly 8”x 8”), press the mixture down hard with a damp hand. When compacted, cover and place in the fridge for 2-3 hours.

Remove from the fridge when cold and hard and slice into 10 fingers. These can be stored outside the fridge but don’t let them get too warm as they will be stickier to eat!
