The perfect fast food, that’s actually good for you! Peas are a great way to boost the vitamins in this omelette even more and it’s perfect as a quick snack.

1 tbsp Olive Oil |
3 Eggs |
1 tsp Dried Oregano |
1 tsp Dried Thyme |
1/2 to 1 tsp Salt |
1 Bunch Fresh Parsley, chopped |
4 tbsp Frozen Peas (defrosted) |
Beat the eggs, dried herbs and salt together until frothy.
Heat a large non-stick frying pan over a medium heat and add the oil.
Pour in the beaten egg and swirl around the pan, moving around until the bottom starts to set.
Sprinkle over the parsley and the frozen peas on one side of the omelette and start to roll up.
Serve as soon as the eggs have just cooked.
